I wasn’t sure what to come up with so there we go until I can be original 😉

Ingredients
Bacon
Cheese (you can use any cheese you like. My kiddo is picky about her cheeses…)
Roma tomatoes
Adobo seasoning (you can find it in the Asian aisle in walmart)
Chicken

 

I start by cooking the bacon. I would love to find lardons here but alas, I haven’t yet. So I take a few strips of bacon and cut them up and throw them in a pan. I try to separate them as much as I can beforehand. You can cook these at the same time as the chicken if you would like. I don’t because I love cooking chicken in the bacon fat 🙂

I don’t salt the chicken because the adobo and the bacon have plenty. I do pepper it and then put a bunch of adobo seasoning on it. Cook in bacon fat! 🙂  (no pic apparently…)

When you have about 3minutes to go for the chicken, put the shredded cheese on it and cover with a lid. If you don’t cover it, the cheese won’t melt well. Remove it from the pan when the cheese is almost done. Add bacon and tomatoes and serve!

I made peas and homemade artisan bread. I found the recipe here. The only thing different I did was to not put in a pot, simply because I didn’t have parchment paper. I put it on a cookie sheet and it came out beautifully! This was my first time ever making bread so if I can do it, so can you!
